Baron Lamington was the governor of Queensland, Australia, between 1896 and 1901. Although we know that these cupcakes bear his name, Lamingtons, it is not clear who came up with the idea of bathing cubes of chocolate biscuits and coating them with grated coconut, but the truth is that they are delicious.
They are common dessert from stores and supermarkets in Australia and New Zealand, although as with traditional recipes, the best ones are always homemade. Its preparation is simple, although the process of the batter is a little heavy so I advise you to take it easy, it’s worth it.

Ingredients for the cakes:
- 125 g of butter at room temperature plus a little more to grease the mold.
- 150 g of ground sugar.
- 2 eggs.
- 230 g of flour.
- 2 teaspoons of baking powder, a generous pinch of salt.
- 1 teaspoon of vanilla extract.
- 100 ml of milk and 200 g of grated coconut.

- 400 g of ground sugar.
- 4 tablespoons of cocoa powder.
- 25 g of butter and 100 ml of milk.
How to make lamingtons Cake Recipe
We preheat the oven to 180ºC. Beat the butter with the sugar, until the mixture is pale and fluffy. We add the eggs one by one, beating well after adding each one. We sift the flour, salt, and yeast in a bowl.
In a jar, we mix the vanilla extract with the milk. Add half of the flour mixture to the egg mixture and then half of the milk mixture. We stir gently with a wooden spoon, add the remaining mixture of flour and milk and stir.
Pour into a square mold of 20×20 cm, previously greased and bake about 30 minutes or until pricked with a toothpick it comes out clean. We remove from the oven and let cool on a rack. When it is completely cold, we break it into 16 pieces.
To prepare the coverage, we sift the ground sugar and cocoa in a large bowl. Add the butter and milk and mix well until you get a soft and slightly liquid coating with which to cover the biscuit dices. Finally, we coat them in coconut and serve.
If you want to get more portions of Lamingtons, you can cut them into smaller pieces. So that they do not dry too much the best thing is that you keep them in an airtight box. They are a great sweet to serve in the snack with an aromatic tea.
